Cream Cheese Pancakes

So just as an introduction, I was recently diagnosed with gestational diabetes.. I am 33 weeks pregnant with my first baby! So being diabetic, pancakes aren't the greatest idea. I decided to try arecipe out since it was without flour.. Cream Cheese Pancakes! 

M y version was a little different than the original. I have tried the recipe a couple times with a few tweaks. I originally followed the recipe, but adjusted the sweetener amount. Since it just said to use packets and I didn't have packets, but a giant bag of Stevia, I just used a couple spoons full as an estimate. It didn't seem like it tasted weird, so I'm guessing that was an ok decision. Another thing I've tried one of the times I have made this is adding coconut flour (a couple spoons full) to the recipe to make the pancakes a little thicker. The reason for that was because the original recipe makes REALLY thin pancakes. To me, I would say it's closer to a crepe.. but still taste pretty dang good for not having flour.  The recipe also only made like 3 of those thin pancakes. For me, I get a good amount of food, so I doubled the recipe and it was perfect for just me. If you're planning on cooking this for more than one person, keep that in mind. I would say that the recipe on that website is for 1 SMALL serving.  Taste wise, a very good find! Let me know what you guys think.. suggestions, etc! Till next time..
